About us

A bakery in the hills, run by two sisters.

Olivia and Avery, fresh-milled einkorn, a bakehouse at home in the Ozarks and a market table on Thursdays in season. This is who we are and why the bread tastes the way it does.

Olivia:Hi, I'm Olivia.

Avery:And I'm Avery.

Olivia & Avery:And together, we're Heritage Valley Baking.

How it started

It started because we both loved to bake.

Heritage Valley Baking is Olivia and Avery — two sisters who started it because they both enjoyed baking and wanted to turn it into a business.

It’s a family business, baked in their own bakehouse at home in the Ozarks, and the two of them run practically the whole thing themselves: milling, mixing, baking, and the table at the market on Thursdays in season.

The heart of it is the grain. Every loaf they make includes einkorn fresh from their own mill, and that’s what they say sets them apart.

Sisters Avery and Olivia stand behind the Heritage Valley Baking Co. market table and smile at the camera. On the left, a bamboo shelf holds kraft window bags of Plain Sourdough and Rosemary and Garlic loaves. In the centre is the arched wooden Heritage Valley sign, with bags of sprinkle cookies in front. On the right, a second shelf holds cinnamon rolls, a cinnamon-swirl loaf and quick breads in clear-lid pans, with chocolate-chip cookie bags on the black tablecloth. Grey curtains, gold tufted chairs and an Arkansas flag fill the background.

The farmers market, 4:30 – 7 PM, in season. Come say hi.

  3. Every loaf

Made with einkorn we mill ourselves and a live sourdough starter, with mostly organic ingredients.

  4. Two sisters

Olivia on the sourdough breads and bagels; Avery on the cinnamon rolls and cookies.

Filmed in the bakehouse, September 2026.
Ingredients

Fresh-milled einkorn. Then the good stuff.

We mill our own einkorn for every loaf, and we try to use mostly organic ingredients.

In every loaf

  • Fresh-milled einkorn
  • A live sourdough starter
  • Mostly organic ingredients
  • Baked by Olivia
A wooden grain mill with dovetailed beech corners, a turned wooden crank handle and a wooden hopper bowl under a white hopper extension. It stands on a wooden block against white panelled walls in the bakehouse, next to a window.
A heaped mound of fresh-milled flour in the steel bowl of a spiral mixer. A thin stream of flour pours from the lip of a white tub onto the peak, with the dough hook and mixer head at the left.

Fresh-milled einkorn

All of our bread includes einkorn we grind in our own mill. Einkorn is one of the oldest grains people have grown, and it tastes like it.

In all of our bread

A hand holds a cracked brown eggshell with a bright golden yolk above a carton of brown, cream and olive farm eggs. A thread of white drips into a blue-and-white transferware bowl, and a glass dish of separated yolks sits in the foreground.

Farm eggs

Brown, cream and blue-green, cracked and separated by hand for the cookies and the cinnamon-roll dough.

By hand

Close-up of pale, creamy sticks of butter stacked in a square glass dish with a teal-tinted rim.

Real butter

Weighed out by the block for Avery’s cinnamon rolls and cookies. We would not know how to make them any other way.

No shortcuts

Thick, bubbly sourdough starter stretches in long strands as it slides from a tilted steel bowl into a spiral mixer's bowl, pooling beside the steel dough hook.

A live sourdough starter

Our breads rise on a live sourdough starter that we feed and keep going in the bakehouse.

In our sourdough

Meet the bakers

Two sisters. One bakehouse.

Practically everything here is made by the two of us, at home in the Ozarks.

Olivia, in a lilac tee with her long brown braid over one shoulder and silver hoop earrings, smiles at the camera. She sits at a honey-pine table with her hands clasped beside a glass jar of zinnias, in front of a black-framed window with trees outside.

Olivia

Sourdough breads & bagels

Olivia makes our sourdough breads — every variety on the menu — and the sourdough bagels, on a live starter and einkorn from our own mill.

“Working with Avery in the bakery is fun, but it can be a little crazy sometimes.”
Avery smiling at the camera in the bakehouse kitchen. She wears a black puff-sleeve top under a grey-and-cream striped linen apron, with her hands clasped and a steel mixer bowl beside her.

Avery

Cinnamon rolls & cookies

Avery makes the cinnamon rolls and the cookies — farm eggs separated by hand, real butter, and a very generous hand with the chocolate chips.

“Working with Olivia is mostly fun, but sometimes we can get on each other’s nerves.”

Take 23

Saying our names took a while.

We’re much better at baking than at being on camera. Here’s proof.

Avery:Stop, we can't get past our names!

Olivia:We couldn't get past our names, and now?

Avery:Yeah, but it's been like 30 minutes.

Behind the camera:What's so hard about it? I don't understand.

Behind the camera:They need to go to, like, acting classes.

Avery:Dude, I'm not gonna be sitting here grumpy.

Avery:I have to smile.

Avery:Telling us to stop does not help, okay?

Olivia:Am I fired?

Avery:Why did we do that? Why are we walking?

Our values

What we won't compromise on.

  1. 01

    Pre-order, and it’s yours.

A pre-order is set aside with your name on it, so there’s no hoping one is left when you get to the market.

  2. 02

    Fresh-milled einkorn in every loaf.

All of our bread includes einkorn we grind in our own mill. It takes longer than opening a bag of flour. It is worth it.

  3. 03

    Family-run.

We’re sisters, and we run practically the whole business ourselves, from the mill to the market table.

  4. 04

Made at home, and we say so.

We’re an Arkansas cottage bakery, so every sale carries the Food Freedom Act notice. Ask us what’s in anything.
